    What's in a Cantábrico tapas spread

    Tapas isn't one dish — it's a way of eating. A spread that builds across the table, never finishes in any one direction, and lets a room of guests pick their own next bite. A Cantábrico tapas event includes both the cold spread you graze on for the first hour and the hot dishes that come out of the kitchen at intervals.

    Cold tapas

    Hot tapas

    Out of the kitchen at intervals: croquetas in three fillings (jamón, mushroom, cod), tortilla de patata served warm, gambas al ajillo sizzling in olive oil, and patatas bravas with our own brava sauce. Hot tapas land at the table while guests are still grazing the cold spread — that's how the rhythm works.

    Live paella as the centerpiece

    The paella add-on is where the event tilts into something most Houston catering doesn't do. We bring a gas burner and a paella pan to your venue, build the rice from cold, and cook the full paella in front of your guests. Most paella catering in Houston delivers cold; we've found the difference is in the bottom-pan crust — the socarrat — that you only get when the rice cooks at temperature on-site. We start about ninety minutes before service. Mixed paella with chicken, seafood paella, or arroz con verduras for vegetarian tables.

    Corporate events

    Office dinners, client gatherings, and end-of-year celebrations. We've cooked for tech offices in The Woodlands, marketing firms in River Oaks, and law-firm holiday tables in Memorial. For corporate events, the kitchen-to-table rhythm matters: tapas land at intervals, paella is timed to coincide with the moment guests have settled in and cleared business talk. We coordinate with the host's timeline, not the other way around.

    Wedding receptions, rehearsal dinners, milestone birthdays at home, anniversary dinners. The format works whether you're hosting twenty guests in your dining room or sixty at a venue. For weddings, the live paella reads as the centerpiece — the moment everyone gets up to watch the rice come together. For private home events, we set up in your kitchen and serve from there.

    Booking lead time

    Two weeks minimum, four weeks ideal. For weekends in peak months — October through December and April through June — we recommend even more. For events less than two weeks away, call Cristina directly at (713) 878-7785 and we'll see what's possible.

    Event sizing

    Twelve guests is a soft minimum. The sweet spot is fifteen to thirty. We've cooked for events up to sixty. If your event is smaller than twelve, send the inquiry anyway — we'll tell you whether the format works at your scale or refer you to someone who can do it well at smaller numbers.

    Pricing

    Pricing depends on the menu, the guest count, and how much we cook on-site versus prep ahead. We send an itemized proposal after you tell us about your event. No deposit and no contract until you've signed off.

    Why we cook live at your event

    The live element isn't a marketing line. Paella that's been transported and re-warmed loses the bottom-pan socarrat — the entire point of paella for anyone who grew up eating it. The same applies, in different ways, to the rest of the spread: jamón sliced thirty minutes before service tastes different than jamón sliced and packaged the night before; tortilla served warm from the kitchen tastes different than tortilla refrigerated and reheated. We've cooked live at twenty-five-plus events since 2024 because the alternative is a different product.

    A recent Cantábrico event

    A 50th-birthday in Houston for a mixed Spanish and Mexican-American crowd. The host wasn't sure how to land a Spanish menu with a Mexican-American audience also at the table. We built around intense, vinegary, anchovy-forward bites — empanadas alongside gildas, the Basque skewer of olive, anchovy, and piparra. After, she told us the empanada-and-gilda combo was the one people kept coming back to all night.

    When Cantábrico is NOT the right fit

    We're not the right caterer if your reference is the grocery-store charcuterie tray. The jamón we serve is 5J — a different category, a different conversation. Same goes for budget: we charge what real Spanish embutidos and live cooking cost. If your reference is fast-casual catering pricing, you're shopping in a different aisle, and we'll cheerfully wave you toward the right one.

    How many tapas should I plan per guest?

    For an event where tapas are the main meal, plan six to eight different tapas per guest, with two or three servings of each. For a cocktail-hour-style event before a sit-down dinner, three to four different tapas per guest. We tune the count to your event format when we send the proposal.

    Do you accommodate dietary restrictions?

    Yes. Tell us in the inquiry form. The tapas menu has natural fits for vegetarian (tortilla de patata, queso manchego, patatas bravas, marinated olives) and gluten-free (most of the cold spread, the live paella). For allergies, let us know specifically and we separate prep stations.

    How far in advance should I book?

    Do you provide servers and serving equipment?

    We bring everything for the food: serving trays, the paella pan, the jamón slicer, presentation boards. For full-service plating with passed-tray staff, we coordinate with our regular partners. For private home events with simpler setup, we deliver fully prepped and you self-serve from the spread.

    Can you cater at my home, or only at venues?

    Both. We've cooked in private homes (kitchen access required for live paella) and at venues across the Houston metro. Live paella needs space — about three to four square meters of safe ground for the gas burner. We'll walk through the setup with you when we send the proposal.
