Live paella catering in Houston
We cook paella the way it's meant to be cooked: live, over an open flame, in a paella pan the size of a small dining table, in front of the people who'll eat it. The smell of saffron when the rice goes in. The hiss when broth hits hot oil. The way a room turns toward the burner when the paellera comes off the flame and lands on the table.
That's the live paella catering we do in Houston, for private celebrations, corporate dinners, weddings, and the milestone events where the food is the centerpiece. We're Cristina (from Asturias) and Blanca (from Barcelona), the two of us behind Cantábrico.

Paella cooked live, in front of your guests
The signature isn't the paella. It's the cooking of it. A paella that arrives already cooked, sitting in a chafing dish for an hour, is technically still paella, but the rice is gone, the socarrat (the caramelized layer at the bottom of the pan) never formed, and the aromatic top notes that make the dish what it is left fifty minutes ago.
The paellera, the burner, the open flame
We arrive with everything: the paellera (the wide, shallow Spanish pan paella is named after), a propane burner that delivers even heat across the whole pan, the Bomba rice, the saffron, the imported ingredients. The pan is the diameter of a coffee table for a smaller event, larger for a wedding. The burner is loud enough to be part of the room and quiet enough to talk over. The smell is what carries the moment.

Why we cook on-site (and never deliver cold)
A live-cook paella event is one experience. A paella that gets reheated in your venue's kitchen is a different one. We don't deliver cold paella because we don't think it's the right product. If your venue can't accommodate live cooking, no propane allowed, no outdoor space or covered patio, we'll tell you before we book. Sometimes we can adjust the format (live-cook tapas alongside delivered paella variants, for instance). Sometimes we'll point you to a caterer who handles delivery-format paella better than we would.
How a Cantábrico paella event works
A short walk-through, in case you've never hosted live-cook catering before.
Two-week minimum, four-week ideal lead time
We need at least two weeks to plan a paella event well. Four weeks is ideal, it lets us source the right ingredients, lock in the menu around your guest count, and coordinate logistics with your venue. We arrive, we set the table, we cook
A Cantábrico paella event isn't a delivery. We come to your space with the food, the boards, the linens, the plating, the candles when they belong. The paella cooks in front of the room while the rest of the meal, tapas, charcuterie, salads, dessert, gets staged on the table. The food shows up live and hot, and so does the table. Tu hogar, nuestra cocina, your home, our kitchen, is the line we keep coming back to.

What we bring, what you provide
We bring the paellera, the burner, the ingredients, the serving boards, the linens, the plating, and us. You provide a flat outdoor surface or covered patio (about 6 ft × 6 ft) for the burner, proximity to a power outlet for our prep station, and a guest list with any dietary notes ahead of time. That's the whole list.
The paella varieties on our menu
What we actually cook, named honestly.
Paella valenciana, the original
The original paella, from the Albufera region of Valencia. Chicken, rabbit, green beans, garrofón (a large white bean from Valencia), tomato, paprika, saffron, olive oil, Bomba rice, and water reduced into broth in the pan. No seafood. No chorizo. (More on the chorizo question below.)
Paella de marisco, seafood
The other Spanish classic. Shrimp, mussels, calamari, sometimes monkfish or langoustines depending on what's good that week. The same Bomba rice, the same saffron, the same socarrat at the bottom of the pan. We work with seafood we can vouch for; if the market doesn't deliver, we say so in advance and adjust.

Paella mixta, when the host wants both
A common request: "can we do half meat, half seafood?" Yes. Paella mixta is the practical answer when the guest list is split. Some Spanish purists call mixta a hybrid; we call it the version that works for an American household where preferences are mixed.
Vegetarian paella, yes, we make it
Artichokes, asparagus, white beans, green beans, red bell pepper, tomato, paprika, saffron, Bomba rice. Same socarrat, same flavor depth. Vegetarian guests don't get a sad consolation plate.
The "no chorizo" rule (and why it matters)
Despite what most US-circulating "Spanish paella" recipes claim, traditional paella does not contain chorizo. Adding chorizo turns the dish into something else, fine, but not paella. This isn't a snobby rule. It's a definitional one. Paella is rice cooked in a specific way with a specific set of regional ingredients, and chorizo isn't one of them.
We respect that tradition without exception. The word "paella" appears in our menu names because it's accurate when the dish is made correctly. The granular names, paella valenciana, paella de marisco, paella mixta, describe what's actually in each one.
If you've had paella with chorizo somewhere else and loved it, that's fine. There are caterers who do that version and they'll do it well. We just don't.
Houston and the metro we serve
We're a service-area caterer. There's no storefront and no commercial kitchen we own, when an event needs more capacity than two of us can carry, we rent kitchen space by the hour. Our service area is Houston and the surrounding metro.
The 8 cities we cover
Houston (including The Heights, Memorial, and River Oaks within city limits), The Woodlands, Katy, Bellaire, Sugar Land, Cypress, Pearland, and Spring. If your event is anywhere in this footprint, we can be there with the burner, the paellera, and a full Spanish setup. Where we don't go (yet)
Galveston and College Station are outside our current operating range. The drive plus the load-in time push the day past what's practical for a hot live-cook event. If the math makes sense for your event, we'll let you know. If not, we'll point you to a caterer who can.
When we're not the right paella caterer
A few honest framings, because the question matters more than the pitch.
If your reference is paella that arrived cold from a different caterer. A returning client of ours told us, after we'd done her parents' birthday, that her family had ordered paella from another caterer for years and it had always arrived cold. She thought that was just how catered paella worked. The first time we cooked the paella live in front of her family, she said: "Wait, you cook it here? It's hot? I've eaten cold paella my whole life." Live-cook is what we do. Cold-delivery paella is a different category, and we don't compete with it on price.
If the budget assumes grocery-store pricing. Bomba rice, real saffron, jamón 5J, extra-virgin olive oil from Spain, these aren't grocery-store prices. We're proud of what we charge because the food is what we say it is. If your reference price is closer to fast-food per plate, we're a different category and a different caterer is the right answer.
We're not the only authentic Spanish caterer in Houston. Other people in this city cook Spanish food, and some of them are friends. Our claim is the food, not a title.

How much does paella catering cost in Houston?
Pricing depends on guest count, paella variety, and live-cook scope. We work from a soft 12-guest minimum and have catered events up to 60 guests. Send us the event details, date, headcount, venue, dietary notes, and we'll come back with a specific quote within one business day.
How far in advance should I book paella catering?
Two weeks minimum, four weeks ideal. The earlier you book, the better we can source ingredients and coordinate with your venue. For events less than two weeks away, call Cristina (713.878.7785) or Blanca (713.562.1300) directly.
Can you do live paella for under 12 guests?
Twelve is a soft minimum, not a hard cutoff. Smaller events are case-by-case. Send us your details and we'll let you know whether the live-cook format makes sense at that size.
What's the largest paella event you've catered?
About 60 guests. For events larger than 60, the conversation starts earlier: we may rent additional kitchen capacity or coordinate two paelleras working in parallel.
Do you deliver paella, or only cook on-site?
Live-cook on-site is the signature. We can deliver, but the paella we'd deliver isn't the same product as the paella we cook live. If delivery is the only option for your venue, we'll tell you what we'd actually recommend, sometimes that's a different format, sometimes it's a different caterer.
Can paella be vegetarian?
Yes. Artichokes, asparagus, white beans, green beans, peppers, tomato, paprika, saffron, Bomba rice. Same socarrat, same flavor. Vegetarian guests at a paella event don't get a side plate.
Do you cater paella outside Houston?
